Superhero Vegetable Soup

Have you ever seen an uglier dish? You know when a five year old comments that “you won’t be blogging that“, that presentation wise, there’s not much hope for it. Thankfully, and the reason the recipe made it here, the taste is out-of-this-world good. So good that even after a whole raft of omg-how-awful-does-it-look comments, everyone went back for seconds. It is so jam packed full of vegetable goodness, so healthy and soothing, you feel better the instant you eat it. Best of all it’s very budget friendly and uses vegetables most of us will have to hand. Fresh corn kernels are better in that you get sweet juicy bursts of corn in your mouth as you eat, but if all you have is canned then use it anyway. I really hope you give it a go.

The superhero part of the title refers to Popeye and his can of spinach. With a whole bunch of leafy green superfood kale in this, you will be kicking butts in no time.*

*Please note: you may not actually kick any butts in a literal sense. Sorry.


  • a few tablespoons of olive oil
  • one brown onion, peeled and diced
  • two celery stalks, diced
  • two carrots, diced
  • one leek, the lower white half washed well and diced
  • one swede, diced
  • one parsnip, diced
  • two potatoes, peeled and diced
  • two garlic cloves, finely chopped
  • two corn cobs, peeled and kernels sliced off {you could use a can of corn kernels}
  • one bunch of kale, chop the stalks and leaves and keep them separate
  • approx 2 litres of vegetable stock
  • salt and pepper to taste
  1. Heat the oil in a large deep pot. Add the onion, celery, carrots, leek, swede, parsnip, and potato. Saute for about ten to fifteen minutes. Add the garlic, corn, and kale stalks, saute for a few minutes, then add the stock. Reduce to a simmer, cover with a lid, and leave it to cook for about thirty minutes.
  2. Add the kale leaves, and taste for seasoning. It will need pepper, and maybe a little salt. Simmer for another thirty minutes.
  3. Just before serving use a stick blender to puree about half  the soup, leaving enough of the vegetables for texture. Alternatively you can serve it without pureeing it at all. Ignore the colour, and dig in.

        Do you remember talking about squashes? Uou should try making pumpkin or butternut squash ravioli sometime, or butternut squash apple soup. All sweet, creamy, comforting, so delish and perfect for your changing weather. I could not make the ravioli but you could pull it off for sure.

            1. No, I have never seen any pumpkin beverages. But don’t forget that our climate is mild, even in winter. So we skip a lot of hearty warming things.
